Healthy Recipes, Husband Approved

I started tracking calories a couple days ago... I forgot how much I actually like tracking (I'm a nerd like that). It is like a little game for me. I am using My Fitness Pal. It makes it really easy, and I can just plug everything into my phone. One of my favorite parts is creating my own recipes, and I can manipulate them to get the calories where I want them. 


Here are a couple of my favorite "go to" recipes that are around 300-400 calories per serving (please note, these are recipes my husband asks me to make even when we aren't watching what we eat)... 


Chicken Salsa Salad 


2 Boneless Skinless Chicken Breasts 
1 Bag Hearts of Romaine Salad 
1/2 C Chunky Salsa (I use medium heat) 
1/4 C Light Sour Cream 
1/4 C Mexican Blend Shredded Cheese 


Grill or bake chicken breasts. I use frozen chicken and bake mine at 375 for 30-40. Let chicken cool for a minute, then chop. 


Mix salsa and sour cream together to create the dressing. 


Open bag of salad and pour into large mixing bowl. 


Add chicken. Pour dressing over salad and mix to coat. Sprinkle cheese over top. When we aren't watching our carbs, I'll add a few crushed tortilla chips on top for crunch. 


This makes enough salad to feed 3-4 people, but most of the time my husband and I just split it. When splitting into 2 servings, it comes to 289 calories. 


Cheese Steak Sandwiches 


12 ounces thinly sliced lean steak 
1 onion, sliced 
1 Green Bell Pepper, sliced 
1/2 C Cheddar Cheese, shredded 
Salt and Pepper to taste 
3 Whole Wheat Pitas 


Turn oven on to 200, place Pitas in oven to warm. 


Heat large skillet to medium heat, spray a small amount of olive oil into pan. Sauté onion and pepper for 5-7 minutes until tender. Remove to plate, set aside. 


Sprinkle meat with salt and pepper. Using the same pan, cook meat until no longer pink. Add onions and bell peppers, cook 1 more minute. Sprinkle cheese in pan, cover and remove pan from heat. Let sit a couple minutes until cheese melts. 


Scoop 1/3 beef mixture and place on warm pita. 


Makes 3 servings, 410 calories each. 


Hope you like these recipes. They are super easy, only use a few ingredients,  and tasty enough to satisfy my husband.
